Ingredients

  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and garlic, and sauté until the onion is translucent.
  2. Add the ground turkey and cook until browned.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the orzo and cook according to package instructions, usually about 8-10 minutes.
  5. Add fresh spinach and stir until wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with Parmesan cheese if desired.
