Description

A vibrant and flavorful mix of grilled bell peppers, zucchini, eggplant, and red onion, perfect for any meal.


Ingredients

  • 2 Bell peppers, cut into bite-sized pieces
  • 2 Zucchini, cut into bite-sized pieces
  • 1 Eggplant, cut into bite-sized pieces
  • 1 Red onion, cut into bite-sized pieces
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 tablespoon Herbs (like thyme or rosemary)


Instructions

  1. Preheat the grill to medium-high heat.
  2. Wash and cut the vegetables into bite-sized pieces.
  3. Combine the vegetables with olive oil, salt, pepper, garlic powder, and herbs in a bowl.
  4. Toss to coat evenly.
