Description

A traditional Mexican soup made with tomatillos, green chiles, and tender chicken, perfect for family gatherings or cozy weeknights.


Ingredients

  • 2 cups shredded chicken
  • 2 cans hominy, drained and rinsed
  • 4 tomatillos, husked and chopped
  • 2 green chiles, chopped
  • 6 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings:
  • Diced radishes
  • Chopped cilantro
  • Lime wedges
  • Avocado
  • Tortilla chips


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, cooking until softened.
  3. Stir in tomatillos and green chiles, cooking for a few minutes until they start to soften.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the shredded chicken and hominy, followed by cumin, salt, and pepper.
  6. Simmer for about 30 minutes for the flavors to meld.
  7. Serve hot with your favorite toppings.

Notes

Can substitute chicken with pork or jackfruit for a vegetarian option. Make ahead for better flavor!
