Ingredients

- 2 tbsp olive oil
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 1 lb chicken breast or thighs
- 1 can hominy (drained and rinsed)
- 4 cups chicken broth
- 1 tsp cumin
- 0.5 tsp oregano
- Salt (to taste)
- Black pepper (to taste)
- 1 lb tomatillos (husked)
- 2 green chilies
- 0.5 onion
- 2 cloves garlic
- 1 cup cilantro
- 0.5 cup water
- 1 lime (juiced)
Instructions
- Boil tomatillos and green chilies until softened, then blend with onion, garlic, cilantro, lime juice, and water.
- Sauté onion and garlic in oil in a large pot.
- Add green sauce and cook for 5 minutes.
- Add chicken, broth, hominy, and spices.
- Simmer until chicken is cooked, then shred and return to pot.
- Simmer 10 more minutes, then serve with toppings.
Notes
For extra flavor, let the pozole sit for a few minutes after cooking. Garnish with fresh toppings like avocado or radishes.
