Ingredients

- 1 cup quinoa
- 2 cups water or chicken broth
- 2 grilled chicken breasts, sliced
- 1 cucumber, diced
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and combine it with water or chicken broth in a pot. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until quinoa is fluffy and liquid is absorbed.
- Combine the cooked quinoa, sliced grilled chicken, cucumber, kalamata olives, cherry tomatoes, red onion, and feta cheese in a large bowl.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- Serve chilled or at room temperature.
Notes
For a unique twist, feel free to add your favorite Mediterranean ingredients like artichoke hearts or roasted red peppers.
