Description

Crispy baked potato skins topped with melted cheddar cheese, crumbled bacon, and fresh green onions, served with sour cream.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled bacon
  • 1/4 cup green onions, chopped
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Olive oil for brushing


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and poke holes with a fork. Bake for 45-60 minutes until tender.
  3. Slice the potatoes in half lengthwise and scoop out some flesh to create a shell.
  4. Brush the insides with olive oil and season with salt and pepper.
  5. Place the potato skins on a baking sheet, cut side up, and bake for an additional 10-15 minutes until crispy.
  6. Remove from the oven and fill with cheddar cheese and crumbled bacon.
  7. Return to the oven for another 5-7 minutes until cheese is melted.
  8. Top with sour cream and green onions before serving.

Notes

For extra crispiness, consider double baking the potato skins. Customize toppings based on personal preferences.
