- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled bacon
- 1/4 cup green onions, chopped
- 1/2 cup sour cream
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and poke holes with a fork. Bake for 45-60 minutes until tender.
- Slice the potatoes in half lengthwise and scoop out some flesh to create a shell.
- Brush the insides with olive oil and season with salt and pepper.
- Place the potato skins on a baking sheet, cut side up, and bake for an additional 10-15 minutes until crispy.
- Remove from the oven and fill with cheddar cheese and crumbled bacon.
- Return to the oven for another 5-7 minutes until cheese is melted.
- Top with sour cream and green onions before serving.
Notes
For extra crispiness, consider double baking the potato skins. Customize toppings based on personal preferences.
