Golden Chicken and Lentil Soup

Description

Ingredients

Scale
  • 3-4 tablespoons olive oil
  • 2 cups yellow onions, thinly sliced
  • 10 cloves garlic, pressed or minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon seven spice
  • ½ teaspoon ground coriander
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts (or thighs)
  • 8 cups low sodium chicken stock
  • 1 ¼ cup red lentils, rinsed
  • 1 ½ cups chopped baby spinach, parsley, cilantro, dill, and mint
  • Lemon wedges (to finish)
  • No knead bread (for serving)


Instructions

  1. Add 3 tablespoons of oil in a large pot over medium heat. Add the sliced onions and sauté for 16-20 minutes or until golden brown. Remove ¼ of the caramelized onions to a paper towel-lined plate for garnish.
  2. Add the garlic to the pot and cook for an additional 30-60 seconds. Then add turmeric, coriander, seven spice, cayenne, kosher salt, and black pepper.
  3. Bring the soup pot to a boil. Once boiling, add the chicken, lower the heat to low, cover, and cook for 18-20 minutes or until the chicken is cooked through to a minimum of 165ºF.
  4. Remove the chicken to a plate and allow it to cool slightly before shredding.
  5. Bring the soup pot back to a simmer and add the lentils. Discard any foam that rises to the top. Cover, lower the heat to medium-low, and cook for 15-20 minutes until tender.
  6. Add chopped herbs and shredded chicken to the soup. Adjust the thickness with broth if necessary and taste for salt. Add lemon juice if desired.
  7. Serve with crusty bread and top with caramelized onions.
