- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsweetened cocoa powder
- 1/2 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 cup boiling water
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 can sweetened condensed milk
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Whisk together flour, baking powder, baking soda, salt, and cocoa powder in a bowl.
- Cream the butter and sugar together in a separate bowl until fluffy.
- Add eggs one at a time to the butter mixture, stirring well after each addition.
- Stir in vanilla extract.
- Alternate adding the flour mixture and buttermilk to the wet mixture, starting and ending with the flour.
- Mix in boiling water until smooth.
- Pour batter into the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Heat sweetened condensed milk, coconut, and pecans in a saucepan for the filling, stirring until thickened.
- Assemble the cake with the filling placed between layers and on top.
