Description

A decadent dessert featuring rich chocolate, sweetened coconut, and crunchy pecans, perfect for family gatherings and celebrations.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 can sweetened condensed milk


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. Whisk together flour, baking powder, baking soda, salt, and cocoa powder in a bowl.
  4. Cream the butter and sugar together in a separate bowl until fluffy.
  5. Add eggs one at a time to the butter mixture, stirring well after each addition.
  6. Stir in vanilla extract.
  7. Alternate adding the flour mixture and buttermilk to the wet mixture, starting and ending with the flour.
  8. Mix in boiling water until smooth.
  9. Pour batter into the prepared pans.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Heat sweetened condensed milk, coconut, and pecans in a saucepan for the filling, stirring until thickened.
  12. Assemble the cake with the filling placed between layers and on top.
