Description

A delightful side dish featuring crispy roasted sweet potatoes infused with garlic and parmesan, perfect for family gatherings or weeknight dinners.


Ingredients

  • 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper, freshly cracked
  • 3 cloves garlic, minced
  • 0.5 cup parmesan cheese, freshly grated
  • 2 tbsp fresh parsley, finely chopped


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare a large baking sheet by lining it with parchment paper.
  3. Place the sweet potato cubes in a large mixing bowl.
  4. Drizzle the extra virgin olive oil over the sweet potatoes.
  5. Sprinkle the kosher salt and black pepper onto the sweet potatoes.
  6. Add the minced garlic to the bowl.
  7. Toss the sweet potatoes until they are evenly coated.
  8. Spread the sweet potatoes out in a single layer on the prepared baking sheet.
  9. Bake for 25-30 minutes, or until tender and lightly browned, stirring halfway through.
  10. Remove from the oven.
  11. Sprinkle the freshly grated parmesan cheese over the hot sweet potatoes.
  12. Return to the oven and bake for an additional 5 minutes until the cheese is melted and crispy.
  13. Garnish with finely chopped fresh parsley before serving.

Notes

For a vegan option, omit the cheese or use a vegan alternative such as nutritional yeast.
