- 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 0.5 tsp black pepper, freshly cracked
- 3 cloves garlic, minced
- 0.5 cup parmesan cheese, freshly grated
- 2 tbsp fresh parsley, finely chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare a large baking sheet by lining it with parchment paper.
- Place the sweet potato cubes in a large mixing bowl.
- Drizzle the extra virgin olive oil over the sweet potatoes.
- Sprinkle the kosher salt and black pepper onto the sweet potatoes.
- Add the minced garlic to the bowl.
- Toss the sweet potatoes until they are evenly coated.
- Spread the sweet potatoes out in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, or until tender and lightly browned, stirring halfway through.
- Remove from the oven.
- Sprinkle the freshly grated parmesan cheese over the hot sweet potatoes.
- Return to the oven and bake for an additional 5 minutes until the cheese is melted and crispy.
- Garnish with finely chopped fresh parsley before serving.
Notes
For a vegan option, omit the cheese or use a vegan alternative such as nutritional yeast.
