- 1 large egg
- ¾ oz / 20g feta cheese
- 1 small tortilla or slice of toasted bread
- ¼ avocado
- Dried oregano
- Red pepper flakes
- Cooking oil spray or olive oil spray
- Lemon juice
- Garnish with pickled onions and chili oil
Instructions
- Add a spray of cooking oil to a small fry pan or skillet.
- Crumble over the feta cheese, ensuring the outside circle of the pan is also covered.
- Allow the feta cheese to sizzle and sauté over medium heat for a couple of minutes so the cheese can melt without burning.
- Gently crack the egg in the center of the pan.
- Season the egg with a sprinkle of dried oregano and red pepper flakes.
- Allow the egg to cook to your liking (whether that’s medium or with a runny yolk).
- Warm the tortilla on a gas stove, oven, or in the microwave.
- Smash the avocado on top of the tortilla.
- Add a squeeze of lemon juice.
- When the egg is cooked and the cheese has created a golden brown crust, gently remove from the pan using a spatula and place on the tortilla.
- Garnish with pickled onions and a drizzle of chili oil.
