Description

A delightful and satisfying dish combining salty, creamy feta with a perfectly cooked egg and fresh avocado, perfect for brunch or light lunches.


Ingredients

  • 1 large egg
  • ¾ oz / 20g feta cheese
  • 1 small tortilla or slice of toasted bread
  • ¼ avocado
  • Dried oregano
  • Red pepper flakes
  • Cooking oil spray or olive oil spray
  • Lemon juice
  • Garnish with pickled onions and chili oil


Instructions

  1. Add a spray of cooking oil to a small fry pan or skillet.
  2. Crumble over the feta cheese, ensuring the outside circle of the pan is also covered.
  3. Allow the feta cheese to sizzle and sauté over medium heat for a couple of minutes so the cheese can melt without burning.
  4. Gently crack the egg in the center of the pan.
  5. Season the egg with a sprinkle of dried oregano and red pepper flakes.
  6. Allow the egg to cook to your liking (whether that’s medium or with a runny yolk).
  7. Warm the tortilla on a gas stove, oven, or in the microwave.
  8. Smash the avocado on top of the tortilla.
  9. Add a squeeze of lemon juice.
  10. When the egg is cooked and the cheese has created a golden brown crust, gently remove from the pan using a spatula and place on the tortilla.
  11. Garnish with pickled onions and a drizzle of chili oil.
