- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tablespoon espresso or strong coffee

- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Chocolate-covered coffee beans (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, sugar, and brown sugar until light and fluffy.
- Beat in the egg, espresso, and vanilla until well combined.
- Whisk together the flour, cocoa powder, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet mixture, mixing until just combined.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart. Press a chocolate-covered coffee bean into the center of each cookie.
- Bake for 10-12 minutes, or until the cookies are set but still soft in the middle. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
