- 1 head of Endive
- 1 head of Little gem lettuce
- 2 Juicy pears
- 100g Creamy gorgonzola cheese
- 50g Toasted walnuts
- 50ml Anchovy vinaigrette
Instructions
- Wash and chop the endive and little gem lettuce, and place them in a large salad bowl.
- Slice the pears and add them to the bowl.
- Crumble the gorgonzola cheese over the salad.
- Add the toasted walnuts for crunch.
- Drizzle the anchovy vinaigrette over the top and toss gently to combine.
- Serve immediately as a sophisticated side dish.
Notes
For a vegan option, omit the cheese and use a vegan dressing.
