Description

A festive delight featuring delicate crepes infused with rich, spiced eggnog flavors, perfect for holiday celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 2 cups milk
  • 3 large eggs
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter (melted)
  • Eggnog (for filling)
  • Whipped cream (for topping)
  • Additional nutmeg (for topping)


Instructions

  1. Combine flour, milk, eggs, sugar, vanilla extract, nutmeg, and salt in a mixing bowl. Mix until smooth.
  2. Heat a non-stick skillet over medium heat and add a little melted butter.
  3. Pour a ladleful of batter into the skillet, swirling to coat the bottom.
  4. Cook for about 2 minutes until the edges start to lift, then flip and cook for another minute.
  5. Repeat with remaining batter.
  6. Fill each crepe with eggnog and top with whipped cream and a sprinkle of nutmeg. Serve warm.

Notes

Rest the batter for 30 minutes for better texture. Make sure not to overmix the batter to avoid tough crepes.
