Description

A comforting and flavorful soup inspired by classic egg rolls, packed with savory ingredients and nourishing vegetables.


Ingredients

  • 1 lb ground pork
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh ginger (grated)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 medium yellow onion (diced)
  • 1 cup shredded carrots
  • 4 cups green cabbage (thinly sliced)
  • 1/2 cup green onions (chopped, divided)
  • 6 cups chicken broth
  • 1 tablespoon rice vinegar
  • Salt and pepper (to taste)
  • 2 beaten eggs
  • Red pepper flakes or sriracha (to taste)


Instructions

  1. Brown the ground pork in a large pot over medium heat until it’s cooked through and starts to crisp. Drain excess fat if necessary.
  2. Add aromatics like minced garlic and grated ginger. Sauté until fragrant, about 1-2 minutes.
  3. Build the soup base by adding diced yellow onion, soy sauce, and sesame oil. Cook until the onions are soft and translucent.
  4. Add vegetables such as shredded carrots and sliced cabbage. Stir well to combine.
  5. Pour in the beaten eggs while stirring the soup to create ribbons of egg throughout (optional).
  6. Season with rice vinegar, salt, and pepper to taste. Garnish with chopped green onions and enjoy!
