Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together eggs, salt, and pepper in a bowl.
- Stir in chopped spinach, diced bell peppers, and cheese.
- Pour the mixture into a greased muffin tin, filling each cup about halfway.
- Bake for 20-25 minutes or until the eggs are set.
