Ingredients

  • 1 cup shelled edamame
  • 2 cups mixed salad greens
  • 1 cup shredded carrots
  • 1/2 cucumber, sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • Salt and pepper to taste


Instructions

  1. Combine the edamame, salad greens, carrots, cucumber, and cilantro in a large bowl.
  2. Whisk together the peanut butter, soy sauce, lime juice, honey, and sesame oil in a separate bowl until smooth.
  3. Pour the peanut sauce over the salad and toss to coat evenly.
