Description

Delightful chocolate cookies filled with rich chocolate and festive surprises like Mini Eggs and Malteser Bunnies, perfect for celebrating Easter.


Ingredients

Scale
  • 160 g Unsalted butter
  • 100 g White caster sugar
  • 150 g Light brown sugar
  • 1 medium Egg (at room temperature)
  • 1 medium Egg yolk (at room temperature)
  • 1 tsp Vanilla extract
  • 280 g Self-raising flour
  • 0.5 tsp Salt
  • 200 g Chocolate (either milk, white or a mix of both)
  • 12 Mini Malteser Bunnies (either milk, white or a mix of both)
  • 12 Mini Eggs (roughly one sharing bag)


Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Line a baking tray with parchment paper.
  3. Beat the unsalted butter, white caster sugar, and light brown sugar until light and fluffy.
  4. Add the medium egg and egg yolk, followed by the vanilla extract, and beat until well combined.
  5. Sift the self-raising flour and salt, then gradually fold into the mixture.
  6. Chop the chocolate into chunks and add it to the dough.
  7. Mix in the Mini Malteser Bunnies and Mini Eggs.
  8. Scoop tablespoons of dough and roll into balls, spacing them on the tray.
  9. Bake for 10-12 minutes until lightly golden brown.
  10. Allow to cool on the tray for a few minutes before transferring to a wire rack.

Notes

For a thicker cookie, chill the dough for about 30 minutes before baking. Use sugar alternatives for a diabetic-friendly version.
