- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/2 teaspoon salt
- 1 cup dulce de leche
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and powdered sugar together until light and fluffy. Add in the vanilla extract.
- Mix together the all-purpose flour, cornstarch, and salt in another bowl. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Take small amounts of dough and roll them into balls, then flatten them slightly. Place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely.
- Spread a layer of dulce de leche on the bottom of one cookie and top with another cookie, creating a sandwich.
- If desired, roll the edges in shredded coconut or sprinkle with powdered sugar before serving.
Notes
Chill the cookie dough for about 30 minutes before baking to help maintain shape. Allow cookies to cool completely before filling.
