A delightful summer dessert featuring juicy strawberries in a flaky, buttery crust.
Ingredients

- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 tablespoon butter, diced
- 1 package refrigerated pie crusts (or homemade pie crust)
- 1 egg, beaten (for egg wash)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the sliced strawberries with sugar, cornstarch, lemon juice, and vanilla extract in a bowl.
- Roll out one pie crust and fit it into a 9-inch pie pan.
- Pour the strawberry mixture into the crust and dot with butter.
- Roll out the second pie crust and place it over the filling. Seal and cut slits in the top crust to allow steam to escape.
- Brush the top crust with beaten egg.
- Bake for 35-45 minutes or until the crust is golden brown.
- Let cool before serving.
Notes
Serve warm with ice cream or a sprinkle of powdered sugar.
