- 1-2 tbsp browning, optional
- 2-3 tbsp Jamaican Green Seasoning (or all-purpose seasoning)
- 2 tbsp Jamaican curry powder
- 2 tsp On Everything All-Purpose Blend
- 1 tsp sea salt
- ½ tsp smoked paprika
- 4 tbsp extra virgin olive oil
- 2 tbsp organic brown sugar
- 1 (14 oz.) can full-fat coconut milk
- 2 medium russet potatoes, peeled and cubed
- 2 medium carrots, peeled and chopped
- 1 medium bell pepper, cored and chopped
- 3 garlic cloves, minced
- 2 tsp minced fresh ginger (or ½ tsp ground ginger)
- 1-3 scotch bonnet peppers (adjust for spiciness)
- 2 green onions, lightly crushed or chopped
Instructions
- Combine chicken with browning, Jamaican Green Seasoning, curry powder, On Everything Blend, sea salt, and smoked paprika in a bowl. Mix well.
- Heat olive oil in a large pot over medium heat.
- Add chicken and brown on all sides.
- Add garlic and ginger, sautéing until fragrant.
- Stir in potatoes, carrots, bell pepper, brown sugar, and coconut milk. Mix well.
- Add scotch bonnet peppers and green onions. Bring to a simmer.
- Cover and cook on low heat for 30-40 minutes, stirring occasionally until chicken is tender.
- Taste and adjust seasoning as needed.
Notes
For a diabetes-friendly version, consider using sugar substitutes like stevia or monk fruit. Store leftovers in an airtight container for up to 3 days.
