Description

A refreshing salad combining crisp cucumbers and sweet Vidalia onions in a tangy vinegar dressing, perfect for summer gatherings.


Ingredients

  • 4 medium cucumbers (peeled and thinly sliced)
  • 1 Vidalia onion (thinly sliced)
  • 1/2 cup water
  • 2 cups white wine vinegar (can substitute apple cider vinegar)
  • 1/4 cup granulated monk fruit sweetener (or sugar)
  • Salt and pepper to taste


Instructions

  1. Mix in a bowl the water, white vinegar, and monk fruit sweetener until the sweetener is completely dissolved.
  2. Season with salt and pepper to taste.
  3. Combine in a large bowl or jar, the cucumber slices and onion slices.
  4. Pour the dressing over the cucumber and onion mixture.
  5. Toss everything together until the cucumbers and onions are well coated with the dressing.
  6. Cover the bowl and let the salad marinate in the refrigerator for at least 1 hour before serving.
  7. Adjust the seasoning and sweetness to your preference.
  8. Store in the fridge for up to 4 days.
