Description

A refreshing salad featuring diced cucumber, creamy avocado, and protein-packed edamame, all tossed with a flavorful dressing.


Ingredients

  • 1 cucumber, diced
  • 1 cup edamame, shelled
  • 1 avocado, diced
  • 2 tablespoons furikake
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar

Instructions

  1. Combine in a large bowl diced cucumber, edamame, and avocado.
  2. Whisk together in a small bowl olive oil, soy sauce, rice vinegar, furikake, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for 30 minutes for flavors to meld.
