Ingredients

  • 4 cups green cabbage (finely shredded)
  • 1 cup red cabbage (finely shredded)
  • 1 large carrot (grated)
  • 2 tablespoons red onion (very finely sliced)
  • 3 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Wash all vegetables thoroughly.
  2. Finely shred green and red cabbage.
  3. Grate the carrot using a box grater.
  4. Slice the red onion very thinly.
  5. Place vegetables into a large bowl.
  6. In a small bowl, add mayonnaise.
  7. Add Greek yogurt and Dijon mustard.
  8. Pour in vinegar and lemon juice.
  9. Add honey, salt, and pepper.
  10. Whisk dressing until smooth.
  11. Pour dressing over vegetables.
  12. Toss gently until fully coated.
  13. Sprinkle fresh parsley on top.
  14. Chill for at least 30 minutes.
  15. Serve cold and enjoy fresh crunch.
