Ingredients

- 1 lb beef sirloin or flank steak
- 2 bell peppers (sliced)
- 1 onion (sliced)
- 3 cloves garlic (minced)
- 1 inch ginger (grated)
- 1/2 cup soy sauce
- 1/4 cup beef broth
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cut the beef into thin slices and season with salt and pepper.
- Heat olive oil in a pan over medium-high heat. Sear the beef until browned on both sides.
- In a slow cooker, combine the seared beef, bell peppers, onion, garlic, ginger, soy sauce, and beef broth.
- Cook on low for 360 minutes or on high for 240 minutes until the beef is tender.
- In the last 30 minutes of cooking, mix cornstarch with a little water and add to the slow cooker to thicken the sauce.
- Serve hot over rice or noodles.
Notes
For added variety, you can include other vegetables like broccoli or snow peas.
