Crispy Irish Egg Rolls blend corned beef, cabbage, and carrots in a delightful crispy shell, perfect for any gathering.
Ingredients
- Egg roll wrappers
- Corned beef, cooked and shredded
- Cabbage, shredded
- Carrots, grated
- Onion, finely chopped
- Garlic, minced
- Salt and pepper, to taste
- Oil for frying
- Mustard, for dipping
Instructions
- Heat some oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant.
- Add the cabbage and carrots, and cook until softened.
- Stir in the corned beef, and season with salt and pepper. Cook until heated through.
- Take an egg roll wrapper and place a spoonful of the filling in the center. Fold and roll according to package instructions.
- Heat oil in a deep fryer or large pot. Fry the egg rolls in batches until golden brown and crispy.
- Drain on paper towels and serve with mustard dipping sauce.
Notes
Don’t overstuff to prevent tearing while frying. Make ahead and freeze for quick meals later.
