Description

Crispy Irish Egg Rolls blend corned beef, cabbage, and carrots in a delightful crispy shell, perfect for any gathering.


Ingredients

  • Egg roll wrappers
  • Corned beef, cooked and shredded
  • Cabbage, shredded
  • Carrots, grated
  • Onion, finely chopped
  • Garlic, minced
  • Salt and pepper, to taste
  • Oil for frying
  • Mustard, for dipping


Instructions

  1. Heat some oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant.
  2. Add the cabbage and carrots, and cook until softened.
  3. Stir in the corned beef, and season with salt and pepper. Cook until heated through.
  4. Take an egg roll wrapper and place a spoonful of the filling in the center. Fold and roll according to package instructions.
  5. Heat oil in a deep fryer or large pot. Fry the egg rolls in batches until golden brown and crispy.
  6. Drain on paper towels and serve with mustard dipping sauce.

Notes

Don’t overstuff to prevent tearing while frying. Make ahead and freeze for quick meals later.
