Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
- Fold in the crushed pineapple until evenly distributed.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let it cool to room temperature, then refrigerate for at least 4 hours.
- Before serving, whip the heavy cream with powdered sugar until stiff peaks form and spread over the cheesecake.
