Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  5. Fold in the crushed pineapple until evenly distributed.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Let it cool to room temperature, then refrigerate for at least 4 hours.
  9. Before serving, whip the heavy cream with powdered sugar until stiff peaks form and spread over the cheesecake.
