- 8 oz Boursin cheese
- 2 cups Spinach
- 1 cup Panko breadcrumbs
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper, then cook until browned.
- Add spinach to the skillet and cook until wilted.
- Stir in Boursin cheese until melted and combined.
- Transfer the chicken and sauce to a baking dish and sprinkle panko breadcrumbs on top.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the breadcrumbs are golden.
