A cozy and flavorful dish combining baked potatoes with a creamy, cheesy chicken filling.


Ingredients

  • 4 large russet potatoes
  • 2 cups cooked chicken, shredded
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C). Wash and poke holes in the russet potatoes with a fork, then bake for about 45-60 minutes until fork-tender.
  2. Combine the shredded chicken, ranch seasoning, cream cheese, half of the cheddar cheese, crumbled bacon, salt, and pepper in a mixing bowl. Mix until well incorporated.
  3. Allow the potatoes to cool slightly after baking. Cut them in half lengthwise and scoop out some of the flesh to create space for the filling.
  4. Fill the hollowed-out potatoes with the chicken mixture, then top with the remaining cheddar cheese.
  5. Return the potatoes to the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly.
  6. Garnish with chopped green onions before serving.
