- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 package cornbread mix
- 1 cup shredded cheese
- 1/2 cup milk
- 1 egg
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, brown the ground beef over medium heat until fully cooked.
- Add the black beans, corn, and salsa to the skillet, stirring to combine.
- In a separate bowl, prepare the cornbread mix according to package instructions, adding milk and egg.
- Spread the beef mixture in a greased baking dish.
- Pour the cornbread batter over the beef mixture.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes or until the cornbread is golden brown.
