Description

A hearty and comforting casserole made with ground beef, beans, and cheese, perfect for family dinners and gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 1 cup shredded cheese
  • 1 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef over medium heat in a skillet. Drain excess fat and add the onion, cooking until softened.
  2. Combine the beef, kidney beans, corn, diced potatoes, beef broth, garlic powder, chili powder, salt, and pepper in a slow cooker.
  3. Stir everything to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Sprinkle shredded cheese on top once cooked and let it melt before serving.

Notes

This dish can easily be made vegetarian by using lentils or soy crumbles instead of ground beef. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
