Description

A comforting dish made with crispy potatoes, tender corned beef, and sweet sautéed onions. Perfect for breakfast or brunch.

Ingredients

Scale
  • 2 cups cooked corned beef, diced
  • 3-4 medium potatoes, diced
  • 1 onion, diced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Optional: eggs for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced onions and cook until translucent.
  3. Add the diced potatoes and cook until they are tender and golden brown, about 10-15 minutes, stirring occasionally.
  4. Add the diced corned beef to the skillet, mix well, and cook until heated through and slightly crispy.
  5. Season with salt and pepper to taste.
  6. Serve hot, with optional fried or poached eggs on top if desired.

Notes

For maximum flavor, use leftover corned beef. Let potatoes cook long enough for crispiness.
