Ingredients

- 1 cup orzo pasta
- 2 ears corn, grilled and kernels removed
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup scallions, chopped
- 1/4 cup fresh dill, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the orzo according to package directions; drain and let cool.
- Combine in a large bowl the cooled orzo, grilled corn, cherry tomatoes, cucumber, scallions, and dill.
- Whisk together in a small bowl the Greek yogurt, olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss until well combined.
- Serve chilled or at room temperature.
Notes
For maximum flavor, grill corn until slightly charred. Chill the salad for at least 30 minutes to meld flavors.
