Description

A vibrant and refreshing salad featuring grilled corn, orzo pasta, and fresh vegetables, perfect for summer gatherings.


Ingredients

Scale
  • 1 cup orzo pasta
  • 2 ears corn, grilled and kernels removed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup scallions, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the orzo according to package directions; drain and let cool.
  2. Combine in a large bowl the cooled orzo, grilled corn, cherry tomatoes, cucumber, scallions, and dill.
  3. Whisk together in a small bowl the Greek yogurt, olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss until well combined.
  5. Serve chilled or at room temperature.

Notes

For maximum flavor, grill corn until slightly charred. Chill the salad for at least 30 minutes to meld flavors.
