Description

A luscious Halloween-inspired cheesecake that combines creamy cheesecake with the nostalgic crunch of chocolate cookies.

Ingredients

Scale
  • 1¾ cups crushed chocolate sandwich cookies
  • ½ cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup crushed cookies for topping
  • Whipped cream for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine crushed chocolate sandwich cookies and melted butter in a mixing bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. Bake the crust for 10 minutes, then let it cool.
  5. Beat the cream cheese in a large mixing bowl until smooth and creamy.
  6. Add granulated sugar and vanilla extract, mixing until well combined.
  7. Incorporate the eggs one at a time, ensuring each is fully blended before adding the next.
  8. Stir in sour cream until the mixture is smooth and creamy.
  9. Pour the cheesecake batter over the cooled crust in the springform pan.
  10. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  11. Turn off the oven and leave the cheesecake inside to cool slowly for about an hour.
  12. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  13. Top with whipped cream and crushed cookies before serving.

Notes

For a creamier texture, consider baking in a water bath. Ensure all ingredients are at room temperature for the best results.
