Description

Delightful cookies infused with rich coffee, warm cardamom, and decadent chocolate chunks, perfect for any occasion.


Ingredients

  • 8 ounces unsalted butter (melted until browned)
  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cardamom
  • 1 teaspoon espresso powder
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup dark brown sugar (packed)
  • 1/2 cup granulated sugar
  • 3 teaspoons vanilla extract
  • 2 large eggs (at room temperature)
  • 12 ounces semi-sweet OR dark chocolate (roughly chopped into chunks)
  • 1/3 cup coffee beans (finely chopped)


Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Brown the unsalted butter in a saucepan over medium heat until it turns a golden brown color and smells nutty. Remove it from heat and let it cool slightly.
  3. Whisk together the flour, salt, cardamom, espresso powder, cinnamon, and baking soda in a bowl. Set aside.
  4. Combine the brown sugar, granulated sugar, and browned butter in a large mixing bowl. Stir until well combined.
  5. Add the vanilla extract and eggs to the mixture, whisking until smooth and creamy.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just incorporated.
  7. Fold in the chopped chocolate and finely chopped coffee beans until evenly distributed.
  8. Scoop tablespoon-sized portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
  10. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes

For a chewier texture, refrigerate the dough for at least 30 minutes before baking.
