- 8 ounces unsalted butter (melted until browned)
- 2 and 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground cardamom
- 1 teaspoon espresso powder
- 1/4 teaspoon ground cinnamon

- 1 cup dark brown sugar (packed)
- 1/2 cup granulated sugar
- 3 teaspoons vanilla extract
- 2 large eggs (at room temperature)
- 12 ounces semi-sweet OR dark chocolate (roughly chopped into chunks)
- 1/3 cup coffee beans (finely chopped)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Brown the unsalted butter in a saucepan over medium heat until it turns a golden brown color and smells nutty. Remove it from heat and let it cool slightly.
- Whisk together the flour, salt, cardamom, espresso powder, cinnamon, and baking soda in a bowl. Set aside.
- Combine the brown sugar, granulated sugar, and browned butter in a large mixing bowl. Stir until well combined.
- Add the vanilla extract and eggs to the mixture, whisking until smooth and creamy.
- Gradually add the dry ingredients to the wet mixture, stirring until just incorporated.
- Fold in the chopped chocolate and finely chopped coffee beans until evenly distributed.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Notes
For a chewier texture, refrigerate the dough for at least 30 minutes before baking.
