Ingredients

  • 2 cups of jasmine rice
  • 1 can (13.5 oz) of coconut milk
  • 1 lb of chicken thighs, boneless and skinless
  • 1 cup of chicken broth
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, heat a little oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  3. Add the chicken thighs to the pot and cook until browned on both sides.
  4. Stir in the coconut milk, chicken broth, soy sauce, salt, and pepper.
  5. Add the rinsed rice to the pot and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
  7. Fluff the rice with a fork and serve garnished with fresh cilantro.

Notes

  • For added flavor, marinate the chicken in soy sauce and ginger for a few hours before cooking.
  • This dish can be made in a rice cooker for convenience.
