- 2 cups of jasmine rice
- 1 can (13.5 oz) of coconut milk
- 1 lb of chicken thighs, boneless and skinless
- 1 cup of chicken broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 tablespoon of soy sauce
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, heat a little oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
- Add the chicken thighs to the pot and cook until browned on both sides.
- Stir in the coconut milk, chicken broth, soy sauce, salt, and pepper.
- Add the rinsed rice to the pot and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
- Fluff the rice with a fork and serve garnished with fresh cilantro.
Notes
- For added flavor, marinate the chicken in soy sauce and ginger for a few hours before cooking.
- This dish can be made in a rice cooker for convenience.
