Description

A comforting one-pot dish that combines tender chicken, aromatic spices, and creamy coconut milk.


Ingredients

  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 lime, juiced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Heat a little oil in a large skillet over medium heat.
  2. Add the chicken and cook until browned.
  3. Stir in garlic and ginger, cooking until fragrant.
  4. Add the jasmine rice, coconut milk, chicken broth, lime juice, salt, and pepper; stir to combine.
  5. Bring to a simmer, then cover and reduce heat to low. Cook for about 20 minutes, until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let sit covered for a few minutes.
  7. Fluff the rice with a fork, garnish with fresh cilantro, and serve.

Notes

Marinate the chicken for an hour before cooking for added flavor. Adjust liquid amounts according to preference and experiment with spices for a twist.
