- 1 pound chicken breasts, cut into bite-sized pieces
- 1 cup jasmine rice
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 lime, juiced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat a little oil in a large skillet over medium heat.
- Add the chicken and cook until browned.
- Stir in garlic and ginger, cooking until fragrant.
- Add the jasmine rice, coconut milk, chicken broth, lime juice, salt, and pepper; stir to combine.
- Bring to a simmer, then cover and reduce heat to low. Cook for about 20 minutes, until the rice is tender and the liquid is absorbed.
- Remove from heat and let sit covered for a few minutes.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve.
Notes
Marinate the chicken for an hour before cooking for added flavor. Adjust liquid amounts according to preference and experiment with spices for a twist.
