- 4 cups fresh blackberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine blackberries, 1/2 cup sugar, lemon juice, and vanilla extract. Set aside.
- In another bowl, mix flour, baking powder, salt, and remaining sugar.
- Add milk and melted butter to the dry ingredients, stirring until just combined.
- Pour the batter into a greased baking dish.
- Spoon the blackberry mixture over the batter, do not stir.
- Bake for 45-50 minutes or until the top is golden brown and the blackberries are bubbly.
- Let cool slightly before serving.
Notes
- Serve warm with vanilla ice cream for an extra treat.
- Can substitute blackberries with other berries if desired.
