Ingredients

  • 1 lb flank steak
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, diced


Instructions

  1. In a bowl, combine lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Grill the steak over medium-high heat for about 6-8 minutes per side, or until desired doneness.
  4. Let the steak rest for 5 minutes before slicing it thinly against the grain.
  5. In bowls, layer cooked rice, black beans, corn, sliced steak, avocado, tomatoes, and red onion.
  6. Drizzle with additional lime juice and garnish with cilantro if desired.

Notes

  • For a spicier kick, add jalapeños to the bowls.
