Description

Delicious and nutritious muffins that combine rich chocolate flavor with hidden zucchini for added moisture.


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup
  • 1/2 cup applesauce
  • 1 egg
  • 1 cup grated zucchini
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together whole wheat flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
  3. Whisk together maple syrup, applesauce, egg, and vanilla extract in another bowl.
  4. Stir the dry ingredients into the wet ingredients until just combined.
  5. Fold in the grated zucchini.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool before serving.
