Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup milk
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup fresh strawberries, chopped
  • 1 cup chocolate chips
  • ½ cup heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Stir in the boiling water until the batter is smooth.
  5. Fold in the chopped strawberries and chocolate chips.
  6. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool completely.
  9. In a small saucepan, heat the heavy cream until just simmering, then pour it over the chocolate chips in a bowl. Let it sit for a minute, then stir until smooth to create the ganache.
  10. Dip the tops of the cooled cupcakes into the ganache and let it set.
  11. Top with additional strawberries if desired.

Notes

  • For a richer flavor, use dark chocolate chips.
  • Make sure the cupcakes are completely cool before dipping in ganache.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
