Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh strawberries, sliced
  • 8 oz semi-sweet chocolate, chopped
  • 1 cup heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, vegetable oil, vanilla extract, and buttermilk to the dry ingredients and mix until smooth.
  4. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes.
  5. Once baked, let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  6. In a saucepan, heat the heavy cream until it begins to simmer, then pour it over the chopped chocolate in a bowl. Let it sit for a few minutes, then stir until smooth to create the ganache.
  7. Once the cakes are completely cool, place one layer on a serving plate and spread a layer of ganache on top, followed by sliced strawberries.
  8. Place the second cake layer on top and cover the entire cake with the remaining ganache.
  9. Decorate with additional strawberries on top and refrigerate for at least 30 minutes before serving.

Notes

  • For a richer flavor, use dark chocolate for the ganache.
  • Make sure the cakes are completely cool before adding the ganache to prevent it from melting.
  • This cake can be made a day in advance and stored in the refrigerator.
