Delicious and crispy pizzelle cookies filled with a rich chocolate cannoli cream.

- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 cup ricotta cheese
- 1/2 cup powdered sugar
- 1/4 cup mini chocolate chips
- 1/2 teaspoon cinnamon
Instructions
- In a bowl, mix together flour, cocoa powder, sugar, melted butter, eggs, vanilla extract, and baking powder until smooth.
- Preheat the pizzelle maker and pour a tablespoon of batter onto the center of each pizzelle mold.
- Close the lid and cook for about 30 seconds or until golden brown.
- Remove the pizzelle and let them cool on a wire rack.
- In another bowl, combine ricotta cheese, powdered sugar, mini chocolate chips, and cinnamon to make the filling.
- Spread a generous amount of the chocolate cannoli filling between two pizzelle cookies to form a sandwich.
- Repeat with the remaining pizzelle and filling.
Notes
- For a richer flavor, use dark cocoa powder.
- Store the filled sandwiches in the refrigerator for up to 2 days.
- Dust with additional powdered sugar before serving for a decorative touch.
