Description

Delicious and crispy pizzelle cookies filled with a rich chocolate cannoli cream.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 cup ricotta cheese
  • 1/2 cup powdered sugar
  • 1/4 cup mini chocolate chips
  • 1/2 teaspoon cinnamon


Instructions

  1. In a bowl, mix together flour, cocoa powder, sugar, melted butter, eggs, vanilla extract, and baking powder until smooth.
  2. Preheat the pizzelle maker and pour a tablespoon of batter onto the center of each pizzelle mold.
  3. Close the lid and cook for about 30 seconds or until golden brown.
  4. Remove the pizzelle and let them cool on a wire rack.
  5. In another bowl, combine ricotta cheese, powdered sugar, mini chocolate chips, and cinnamon to make the filling.
  6. Spread a generous amount of the chocolate cannoli filling between two pizzelle cookies to form a sandwich.
  7. Repeat with the remaining pizzelle and filling.

Notes

  • For a richer flavor, use dark cocoa powder.
  • Store the filled sandwiches in the refrigerator for up to 2 days.
  • Dust with additional powdered sugar before serving for a decorative touch.
