Description

Delightful mini chocolate cakes filled with fluffy marshmallow, perfect for sharing and celebrating.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup homemade marshmallow fluff or store-bought
  • 8 oz dark chocolate, for coating


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini cake pan.
  2. Mix the flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. Cream together the butter and sugar until light and fluffy in another bowl.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the milk and vanilla extract.
  6. Gradually add the dry ingredients to the wet mixtures and combine until just mixed.
  7. Pour the batter into the mini cake pan and bake for about 15-20 minutes or until a toothpick comes out clean.
  8. Let cool completely.
  9. Slice the cakes in half horizontally and add a layer of marshmallow fluff in between.
  10. Melt the dark chocolate and dip each cake into the chocolate coating.
  11. Allow the chocolate to set before serving.

Store covered in the fridge for up to 5 days or freeze for up to 3 months.
