Description

This vibrant Chimichurri Chicken, marinated in herby chimichurri sauce and roasted to perfection, brings Argentine flavors to your table.


Ingredients

  • 4 bone-in skin-on chicken thighs
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lemon juice from 1 large lemon
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 batch fresh chimichurri sauce


Instructions

  1. Mix olive oil, lemon juice, and all spices in a bowl.
  2. Coat chicken thoroughly with the marinade.
  3. Marinate covered in fridge for 30 minutes to 4 hours.
  4. Preheat oven to 425°F.
  5. Arrange chicken skin-up on a baking sheet with space in between.
  6. Roast for 35-40 minutes until golden and reach an internal temperature of 165°F.
  7. Prepare chimichurri sauce while chicken cooks.
  8. Rest for 5 minutes, then serve with a generous chimichurri drizzle.

Notes

For an extra crispy skin, sear the chicken thighs before roasting.
