- 4 bone-in skin-on chicken thighs
- ¼ cup extra virgin olive oil
- ¼ cup fresh lemon juice from 1 large lemon
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 batch fresh chimichurri sauce
Instructions
- Mix olive oil, lemon juice, and all spices in a bowl.
- Coat chicken thoroughly with the marinade.
- Marinate covered in fridge for 30 minutes to 4 hours.
- Preheat oven to 425°F.
- Arrange chicken skin-up on a baking sheet with space in between.
- Roast for 35-40 minutes until golden and reach an internal temperature of 165°F.
- Prepare chimichurri sauce while chicken cooks.
- Rest for 5 minutes, then serve with a generous chimichurri drizzle.
Notes
For an extra crispy skin, sear the chicken thighs before roasting.
