Description

A delightful mash-up of flavors, this Chickpea Salad Sandwich combines mashed chickpeas with zesty vegan condiments and fresh vegetables for a satisfying, plant-based meal.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Bread of choice


Instructions

  1. Mash the chickpeas with a fork in a bowl until flaky but not completely smooth.
  2. Add the vegan mayonnaise, Dijon mustard, lemon juice, celery, red onion, salt, and pepper. Mix until well combined.
  3. Spread the chickpea mixture on a slice of bread and top with another slice.
  4. Cut in half and serve.
