Instructions
- Mash the chickpeas with a fork in a bowl until flaky but not completely smooth.
- Add the vegan mayonnaise, Dijon mustard, lemon juice, celery, red onion, salt, and pepper. Mix until well combined.
- Spread the chickpea mixture on a slice of bread and top with another slice.
- Cut in half and serve.
