- 1 can of chickpeas, drained and rinsed
- 1 can of black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 cup of corn, fresh or frozen
- ½ red onion, finely chopped
- 1 cup of cherry tomatoes, halved
- ¼ cup of fresh cilantro, chopped
- 1 avocado, diced
- 1 lime, juiced
- 2 tablespoons of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of chipotle in adobo sauce
- Salt and pepper to taste
Instructions
- Combine chickpeas and black beans in a large mixing bowl.
- Add diced red bell pepper and corn to the bowl.
- Fold in the red onion, cherry tomatoes, and cilantro, mixing gently.
- Whisk together lime juice, olive oil, cumin, and chipotle in a separate bowl.
- Drizzle the dressing over the salad, tossing gently to coat.
- Season with salt and pepper according to your taste.
- Finish by adding the diced avocado just before serving to keep it fresh.
- Serve immediately, or let it chill in the fridge for 30 minutes for flavors to meld.
