- 4 boneless, skinless chicken breasts
- 2 ripe peaches, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 1 cup chicken broth
- 1 tablespoon balsamic vinegar
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, and garlic powder.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add chicken broth, peaches, thyme, and balsamic vinegar.
- Bring the mixture to a simmer and cook for about 3-4 minutes, allowing the peaches to soften.
- Return the chicken to the skillet, spooning some of the peach mixture on top.
- Cook for an additional 2-3 minutes to heat through.
- Serve warm.
