Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • 1 cup chicken broth
  • 1 tablespoon balsamic vinegar


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and garlic powder.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add chicken broth, peaches, thyme, and balsamic vinegar.
  6. Bring the mixture to a simmer and cook for about 3-4 minutes, allowing the peaches to soften.
  7. Return the chicken to the skillet, spooning some of the peach mixture on top.
  8. Cook for an additional 2-3 minutes to heat through.
  9. Serve warm.
