Description

A heartwarming and bold Mexican dish made with tender chicken simmered in a smoky chipotle sauce, perfect for cozy dinners and gatherings.


Ingredients

  • 2 lbs chicken breasts
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2-3 tomatoes, roasted
  • 1-2 chipotle peppers in adobo sauce
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Tortillas for serving


Instructions

  1. Heat olive oil in a pot over medium heat and sauté onions until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Add the roasted tomatoes and chipotle peppers, cooking until the tomatoes are soft.
  4. Transfer the mixture to a blender, add chicken broth, and blend until smooth.
  5. In the same pot, add the blended sauce and the chicken breasts. Season with salt and pepper.
  6. Simmer for about 20-25 minutes, or until the chicken is cooked through.
  7. Remove the chicken, shred it, then return it to the pot to coat with the sauce.
  8. Serve on warm tortillas.

Notes

For best flavor, roast the tomatoes until slightly charred and adjust the spice level according to preference.
