Description

Delicious Chicken Taquitos with a crispy exterior and flavorful filling, perfect for any occasion.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • 8 small corn tortillas
  • Oil for frying or cooking spray for baking
  • Shredded lettuce
  • Sour cream, salsa, or other desired toppings


Instructions

  1. Preheat your oven to 425°F (220°C) if baking.
  2. Combine the shredded chicken, cheese, and taco seasoning in a bowl.
  3. Soften the corn tortillas in a dry skillet or microwave.
  4. Place a spoonful of the chicken mixture onto each tortilla, roll them tightly, and secure with toothpicks if needed.
  5. If baking, place the taquitos on a baking sheet and spray with cooking spray; if frying, heat oil in a frying pan.
  6. Bake for 15-20 minutes or fry until crispy and golden brown.
  7. Serve with shredded lettuce and your desired toppings.

Notes

For a healthier version, bake the taquitos instead of frying them. Leftovers can be refrigerated for up to 3 days.
