- 2 pounds Boneless, Skinless Chicken Breast
- 24-28 ounces Marinara Sauce
- 2 cups Part-Skim Mozzarella Cheese
- ½ cup Parmesan Cheese
- 1 ½ cups Cottage Cheese (Low-Fat or Fat-Free)
- 1 large Egg
- 2 teaspoons Italian Seasoning Blend
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- ½ cup Breadcrumbs
- 1 tablespoon Olive Oil
Instructions
- Cut the chicken into 1-inch cubes.
- Heat a tablespoon of olive oil in a large skillet over medium-high heat.
- Season the chicken cubes with a pinch of salt, pepper, and ½ teaspoon of Italian seasoning and cook until browned, about 5-7 minutes. Alternatively, poach or bake until cooked through.
- Combine cottage cheese, egg, remaining garlic powder, onion powder, and Italian seasoning in a medium bowl. Stir well.
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- Spread 1 cup of marinara sauce at the bottom of the dish.
- Layer the chicken over the marinara, followed by the cottage cheese mixture, then mozzarella and Parmesan cheeses.
- Pour an additional cup of marinara sauce over the cheese layer and spread it evenly.
- Mix breadcrumbs with olive oil in a small bowl and sprinkle over the top of the casserole.
- Finish with remaining mozzarella and Parmesan cheeses.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil and continue baking for another 15-20 minutes until cheese is melted and bubbly.
- Let sit for 10-15 minutes before serving.
Notes
For added flavor, use fresh herbs like basil or parsley. This casserole can be made ahead and frozen for meal prep.
