Chicken Parmesan Casserole

Description

A comforting one-dish meal that combines the flavors of classic chicken parmesan with the ease of a casserole.


Ingredients

  • 2 pounds Boneless, Skinless Chicken Breast
  • 24-28 ounces Marinara Sauce
  • 2 cups Part-Skim Mozzarella Cheese
  • ½ cup Parmesan Cheese
  • 1 ½ cups Cottage Cheese (Low-Fat or Fat-Free)
  • 1 large Egg
  • 2 teaspoons Italian Seasoning Blend
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ½ cup Breadcrumbs
  • 1 tablespoon Olive Oil


Instructions

  1. Cut the chicken into 1-inch cubes.
  2. Heat a tablespoon of olive oil in a large skillet over medium-high heat.
  3. Season the chicken cubes with a pinch of salt, pepper, and ½ teaspoon of Italian seasoning and cook until browned, about 5-7 minutes. Alternatively, poach or bake until cooked through.
  4. Combine cottage cheese, egg, remaining garlic powder, onion powder, and Italian seasoning in a medium bowl. Stir well.
  5. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  6. Spread 1 cup of marinara sauce at the bottom of the dish.
  7. Layer the chicken over the marinara, followed by the cottage cheese mixture, then mozzarella and Parmesan cheeses.
  8. Pour an additional cup of marinara sauce over the cheese layer and spread it evenly.
  9. Mix breadcrumbs with olive oil in a small bowl and sprinkle over the top of the casserole.
  10. Finish with remaining mozzarella and Parmesan cheeses.
  11. Cover with aluminum foil and bake for 25 minutes.
  12. Remove the foil and continue baking for another 15-20 minutes until cheese is melted and bubbly.
  13. Let sit for 10-15 minutes before serving.

Notes

For added flavor, use fresh herbs like basil or parsley. This casserole can be made ahead and frozen for meal prep.
